About the Recipe
A great addition to any summer barbeque or fall evening dinner with friends. Versatile and delicious add this lovely side dish to any meal and expect to be asked for the recipe.
Top Tip: Some blends I have tried have been amazing including, garlic and pepper, cinnamon nutmeg and pepper, chili spice and Montreal Steak Spice.
Ingredients
4 Medium/3 Large of your favorite potatoes washed and chopped into 1-inch cubes. (I use red potatoes because they hold together well after cut.)
2 Teaspoons of sea salt
2 Teaspoons of coconut oil (Any oil is fine however, oils with a high smoke point (i.e. olive oil) will not make the potatoes crispy)
2 Teaspoons of favorite spice blend
Preparation
Step 1
Place washed and chopped potatoes in a large bowl. Add oil and stir to coat potato cubes.
Step 2
Sprinkle with sea salt and stir to coat. Sprinkle your chosen spice blend and stir to coat.
Step 3
Line a 9” x 13” baking sheet with parchment paper. Pour coated potatoes on the sheet and spread out evenly.
Step 4
Roast on 375°F for 30-35 minutes. Serve hot with your other dinner favorites.
